Raw Jaffa Cake

Ingredients:

1st layer: 150 grams of fresh dates, 150 grams of dried apples and a little bit of coconut (1or 2 tablespoons)

2nd layer: 100 grams of dried apricots and juice of one orange

3rd layer: half a cup of squeezed orange juice, 2 tablespoons of carob or cocoa powder and 100 grams of fresh dates


 

Method:

The evening before the preparation, soak the dates in water to soften them. In the morning, peel and pit them. Grind them in a blender together with apples. If you do not peel the dates, the dough will be harder. If you peel them, add a little bit of coconut (a tablespoon or two).
Pour that layer into a lightly oiled pan, in order to take it out easily afterwards.

Also soak the apricots in water overnight, or at least leave them in water for an hour or two before the baking. Blend dried apricots with orange juice until the filling becomes smooth. Spread the filling over the first layer.

Blend dates, orange juice and carob/cocoa powder in a blender, and spread it over the apricot filing.
